Let's take a tour into the world of foodies and have a glance of some of their famous cuisine.
1. Arsa Pitha
It's made with jaggery and rice flour and topped with white sesame seeds. It has many varieties,where sugar arsa pitha is people's favourite.
2.Kardi & Hendua
White one is 'Kardi' which is a wet,fresh and raw form of bamboo shoot.Brown one is 'Hendua' which is a dry variety of bamboo shoot.In Odisha, this is consumed by people from Western Odisha and not by any people from other part of Odisha.
Kardi is either eaten raw,fermented or cooked. 'Tomato khatta with kardi', 'aamil' , 'kardi pickle' & 'kardi bhaja/fry' are some of the favourite dishes of people here.
Hendua is either eaten raw or cooked as in, it is either eaten with 'tomato puta chitka'(roasted tomato with hendua which is eaten with rice/pakhala, also known as water rice) , 'tomato khatta with hendua' and also added to a few curries to enhance the taste.
Both have a sour taste.
3.Aloo bara, baigan bara

ery Odia home. Be it summer, winter or rainy season, we love to eat aloo bara with tomato ketchup or tamarind chutney/green chutney. A bite of aloo bara, followed by a handful of muri("phaanke muri" in Sambalpuri as we have lot of lexicons in Sambalpuri which other languages doesn't have😂) and a sip of tea is a lovely treat to your mouth.
4.Chaul Bara

It is served with tomato chutney and sweet tamarind water here. The best thing about this dish is it is very crispy from outside and soft from inside.
5.Rugda Chhati
Ruguda is a form of root & mushroom which is found in Western Odisha,Chattisgarh & Jharkhand. It grows in a particular type of soil and that's the reason why it's very expensive & rare in market. This type of mushroom is mostly found under sal tree. It's a seasonal favourite.You'll get this mushroom in monsoon. You'll find both peeled & unpeeled ones in market.The most tiring job is peeling this when there's a chances of breaking your nails. It should be washed properly first, as it is covered with a thick coat of mud. Then, it is peeled carefully, or else it woud break and the balls would lose their shape. The end result is, freshly peeled mushrooms cooked with lots of masala to serve and taste like chicken curry for vegetarians. In Odisha, boiled potato is added to this curry. You'll see 2different types of balls: black & white. Both are tasty. Believe me, it can beat the taste of all non-veg dishes
6.Mandia tikhri
It is an Odia style ragi pudding which solidifies & takes the shape of the container it is kept in. Then it is cut in the shape of barfi to serve it chilled.
7.Makhan saag
When it comes to Odisha,specially western Odisha,people are so fond of "saag"(ଶାଗ୍) as a side dish."Saag" is nothing but edible leaf of any vegetable or pulses. This one is 'makhan saag', or leaf of pumpkin(kaddu in hindi). It is served as a side dish with daal & rice, or with 'pakhal'(water rice in Odisha). It is prepared with kardi(or wet & fresh bamboo shoots).
8.Badi phula
It is cooked either with milk or curd and a flavour of roasted garlic enhances the taste. It's a staple food of Western Odisha.

They make the simplest aloo fry, where mustard seeds,turmeric & red chilli powder,green chillies are used and mustard oil does the magic.
11.Liya,Muri,Guras
Paddy puffed rice, puffed rice,milk and sugar/jaggery are mixed together to make your breakfast/snack time perfect.
12.Ghanta tarkari
It is our signature Odia dish where varieties of vegetables are cooked with soaked pulses & legumes. In my home, it is prepared without onion-garlic. It is a dish full of nutrients & served with steamed rice or roti.
13.Chhati bhaja
It's a mushroom pancake which is their seasonal delicacy.
Kheer and Puri is a deadly combo in festive season.
16.Maccha Besar
It is a traditional Odia fish curry which goes well with rice.It is cooked in mustard sauce(mustard seeds+garlic+red chilli paste).
It is fresh water fish which is deep fried first & then cooked in mustard sauce. This sauce also has lot of tomatoes & ambula(dry salted green mango) which makes it a bit tangy.
